Covering all the basics of nutrition, students will walk away with a clear understanding of how nutrition affects sport, exercise, and overall health.

Organized to facilitate knowledge retention, the text logically progresses, with each chapter building upon the information previously presented. Students first get an overview of the role nutrition plays in overall well-being throughout a person’s life. They will learn the functions of carbohydrates, fat, and protein as well as the role each of these macronutrients plays in health and disease. And they will learn the dietary recommendations that support health and an active lifestyle. Next, the function of micronutrients in health and performance is covered. The text concludes with the application of nutrition principles, with guidance to properly fuel for sport, exercise, and health.

Updated based on Dietary Guidelines for Americans, 2020-2025, the second edition incorporates new content on the following: The effect of ketogenic diets on health and muscle Vitamin D and its role in performance and inflammation The effect of progressive training programs on metabolism Sample nutrition plans, including a daily fluid plan, a plan to meet mineral needs, a food plan for resistance training, and more Omega-3 supplementation to support concussion prevention and recovery The latest research on why people regain weight after weight loss To assist students using the text, the second edition of Nutrition for Sport, Exercise, and Health has related online learning tools delivered through HKPropel to help students understand and apply concepts and research findings. These learning tools include flash cards to review key terms presented in the book and supplemental chapter activities to assess student learning and facilitate critical thinking. Figure 1.6 Common signs and symptoms characteristic of overtraining syndrome (OTS).

OTS is complex because there are both physiological abnormalities and often psychological challenges stemming from the stress of competition, family and social relationships, and other life demands. There are no set diagnostic criteria for OTS, because symptoms vary from athlete to athlete and are highly individualized. Athletes with suspected OTS should seek medical attention to rule out other confounding conditions and to develop a sound plan for recovery.

Figure 2.15 Ketogenesis and utilization of ketone bodies.

Although the body makes and uses small amounts of ketone bodies at all times, ketogenesis can be ramped up to meet ATP demand when glucose is low and normal fatty acid oxidation is compromised. Excessive acetyl-CoA molecules (from fat metabolism) are used to produce the ketones acetoacetate and beta-hydroxybutyrate in the liver (figure 2.15). These acidic and water-soluble ketones are easily transported in the bloodstream to nonhepatic tissues for utilization as fuel, an energy source for the brain, intestinal mucosa, heart, skeletal muscle, and kidneys.

Many people do not consume enough of these important vitamins and minerals

Vitamins are necessary for metabolism, proper growth and development, vision, and organ and immune functioning. They also aid human performance by facilitating energy production; supporting muscle contraction and relaxation, as well as oxygen transport; building and maintaining bone and cartilage; building and repairing muscle tissue; and protecting the body’s cells from damage. The human body can make vitamin D, and gut bacteria can make vitamin K; all other vitamins must be consumed in the diet to meet dietary requirements. Although deficiencies or insufficiencies in certain nutrients can impair training adaptations and performance, no current data indicate that excess nutrient intake, beyond the requirements for general health, will improve athletic performance (1). In some cases, excess consumption of specific vitamins may interfere with performance, training adaptations, and recovery. Figure 6.1 illustrates the importance of many vitamins discussed in this chapter.
